About Solas Kombucha!

We began brewing sòlas in early 2017 in a rural kombuchery: a restored barn located on a fruit farm in nova scotia near new ross, set amid the rolling fields growing the very blueberries used in our sòlas bliss kombucha. The demand for quality local kombucha is such that by mid-2019 we outgrew our country roots and moved our entire production to a larger brewing facility in windsor, ns. We pride ourselves on using hyperlocal ingredients where possible, and coming up with complex and delicious varieties. A bunch of booch-lovers ourselves with years of experience fermenting beverages, we create the kombucha we’d like to drink!
