Our story begins in 2017 on a small farm in New Ross, Nova Scotia. Co-founded by Gabrielle Pope and former business partners, Dr. Kombu Brewing Co. got started in a converted barn with blueberries grown onsite to produce our original beverage brand, Sòlas Kombucha. Our two flagship flavours, Clarity & Bliss, continue to be our most popular to this day.
We quickly outgrew our original location and moved to a larger production space in Windsor, NS in 2019. Since then we have introduced new flavours and have grown our production volumes to keep up with the demand from our loyal customers for raw, small-batch kombucha. New in 2022, we are thrilled to introduce two new styles of fermented craft beverages: low-alcohol Sòlas Hard Kombucha, and Black Cat Mead.
